Peru coffee is not your typical South American – it tends to be cleaner and smoother than, say, a typical cheap Brazil or Colombia. Very good Peruvian coffees are very clean and very low acid. San Ignacio is the northernmost province in the Cajamarca region of northwest Peru, right up against mountainous Ecuador. The primary occupation in Cajamarca is coffee growing, and most of it is Organic and Fair Trade.
This bean comes from the Rio Amoju coop, who serve 535 small producers, growing in the mountainous hills, part of the watershed that leads to the Marañon River, the main tributary of the Amazon. The beans are fully washed, processed on each producers’ 7-12 hectare farms.
We roast it to a medium dark, which brings out chocolate fudge, and a pleasant nutty, toasted almond aftertaste . We could sip on this coffee all day long.
