Coffees from Mexico aren’t usually sold as single origin, but you’ve undoubtedly tasted a Mexican in your coffee journey. 80% of Arabica coffee from Mexico is imported to the United States, and most often used in blends, to provide a clean complexity to the cup. Some single origins stand out though, and those from the Chiapas region are some of the best. The region bordering Guatemala on the south produces high quality high-altitude (Sp. “Altura”) coffee, that’s typically light-bodied with subtle nuttiness.
Our Mexico Chiapas SHG (“strictly high grown”) comes from a group of smallholders in the mountainous region of Chiapas, well known for their quality Tipica coffees that rival the best Guatemalan Arabica. We roast it medium, to retain a mild acidity, but reach for milk chocolate as well. It’s a good balanced cup that might take you a bit to really appreciate, but we find it lovely.
