Sidama is a high mountainous area in South Ethiopia, well-suited to growing coffee. You might expect berries, and a pleasant tang of lemon or tangerine from a Sidama product, most often roasted light, to bring out those fruit flavors. This coffee comes from the Harrar and Sidama region, from the Durato Bombe village. It’s a grade 1 (the highest possible grade of bean) natural processed coffee, so we expect a sweet, fruity and complex body.
Roasted lightly, we smell and taste blueberries right off, tart juiciness and bright acidity.
However, we thought we’d take it a different direction for our fruit-loving-but-acid-sensitive customers.
This bean is of the Mokka variety, so also suitable for roasting darker to bring out more of the chocolate flavor. When roasted to a medium-dark level, most all of the acidity disappears, and the body and mouthfeel improves significantly. Whether as espresso or drip, it’s chocolaty fruity blueberry, sweet and juicy. Great crema and texture as espresso.
